1. Traffic Light Sandwiches

Ingredients:
  • 800g white fish fillets (boneless)
  • 1 egg, lightly beaten
  • 1 cup dry breadcrumbs
  • 1/4 cup grated cheese (cheddar or parmesan)
Method:
  • Butter bread if desired, place lettuce, tomato and carrot onto bread in thirds.
  • Cut 9 small holes into one slice of bread, I found a mini m+m tube worked well.
  • Place top slice on and cut into thirds, you should now have three sandwiches that look like traffic lights. They will be a big hit and they are healthy too.

2. Fruit Kebabs

Ingredients and method:
  • Just get two icy pole sticks and layer your child’s favourite fruits on them.
  • I use rock melon, water melon and kiwi fruit as the colours look great.
  • You can drizzle with chocolate or yoghurt if desired.
My son thinks it is great eating off a stick.

3. Snake Sandwiches

Ingredients and method:
  • 1 or 2 pieces of bread (crust removed) and rolled out really thin with a rolling pin.
  • Nutella, cheese spread, jam or your child’s favourite spread.
  • Butter bread and put spread on it, then roll up really tight to make a snake.
  • Brings new life to sandwiches.
My son loves these and best of all none of these require any cooking.
